This role involves working closely with the to execute the menu, maintain kitchen standards, and support efficient kitchen operations. The ideal candidate will have strong experience in Chettinad or South Indian cooking, a passion for authentic flavors, and the ability to thrive in a fast-paced restaurant environment. Prepare and manage dosa/idli batter: soaking, wet-grinding, fermenting, and ensuring consistency/aging. Run the dosa station (eg, plain/paper/ghee roast, masala dosa, set dosa, uthappam, podi/egg dosa) for lunch & dinner service. Idli preparations (idli, mini idli, sambar/podi idli) and sides: sambar, rasam, chutneys (coconut, tomato, mint, peanut).
